Willowbrae Cheese work with a local farm in the Hawkesbury that has a small, much loved herd of goats. Half their milk comes from a mix of Toggenburg, Saanen, Australian Brown, Australian Melaan, and British Alpine, while the other half comes from the highly praised Nigerian Dwarf Goat. The milk is brought back to Rozelle, Sydney where it is pasteurised, processed, and packaged on-site.
